This chilled soup is summer’s answer to effortless elegance. Sweet cantaloupe and crisp cucumber blend into a silky puree, elevated by peppery olive oil and fresh mint. No cooking required-just blend, chill, and serve. Ideal for picnics or brunches, it’s a refreshing counterpoint to grilled meats or crusty bread.

Ingredients
  • 1 medium cantaloupe, scrubbed, peeled, and chopped
  • 1 small cucumber, scrubbed, peeled, and chopped
  • 2 tbsp red onion, chopped
  • 2 tsp kosher salt
  • ⅓ cup water
  • ½ cup olive oil
  • Black pepper
  • Fresh mint, sliced

Instructions
  1. Wash hands with soap and water.
  2. Blend cantaloupe, cucumber, onion, salt, and water until smooth.
  3. Drizzle in olive oil while blending. Season with pepper.
  4. Chill for 2 hours. Serve topped with mint.
