Multiply the recipe to prep extras for the week.
1 tsp olive oil, extra virgin or coconut oil
4 eggs
1 ⅓ cups (200g) feta cheese, cut into cubes
1 cup (25g) baby spinach, finely chopped
1 medium-sized carrot, peeled and finely grated
1 cup (80g) yellow cheese, grated

Directions

Preheat oven to 200°C and line an oven-safe baking tray or Pyrex dish (25cm) with baking paper

In a large bowl, beat eggs with a handheld whisk or hand-held blender.

Add remaining ingredients and fold into egg mixture.

Pour into a paper-lined baking dish.

Remove from oven, allow to cook and serve with side salad or steamed vegetables.

Notes

Prep tips: Instead of a baking dish, pllace the cheese and egg mixture into a lined mini muffin or quiche tray.
Easy ingredient swaps: Swap cheese for pumpkin, zucchini or sweet potato. Swap baby spinach for chard or kale.
