Ingredients

Batch Cook
Multiply the recipe to prep extras for the week.
200g desiccated coconut
130g canned coconut cream (white part only)
3 tbsp raw honey
150g 70% dark chocolate, melted

Directions

Line a small baking tray with baking paper.
Mark as complete

In a large bowl, combine desiccated coconut with coconut cream and honey.
Mark as complete

Roll mixture into 16 bite-sized balls and place onto the baking tray. Freeze for 1 hour.

Dip balls into melted dark chocolate and place back on the tray. Sprinkle with extra shredded or desiccated coconut (optional).

Notes

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.
Prep tips: To save prep time, press mixture into a small baking dish lined with baking paper and freeze for 1 hour. Then cut into bites and dip into dark chocolate. Alternatively, drizzle the melted chocolate over the whole batch and cut into bites afterwards.
Easy ingredient swaps: Swap honey for maple syrup. Swap coconut cream for canned coconut milk.
Additional boosters: Swap 100g of desiccated coconut for almond meal.
For fussy eaters: Place everything into a blender and blend until smooth before rolling into balls, so it has a smoother texture. You might need to place the batter into the fridge to set for half an hour if it is too runny.
