Multiply the recipe to prep extras for the week.
18-20 soft Medjool dates, pitted
1/3 cup crushed peanuts
1/3 cup smooth peanut butter
100g melted 70% dark chocolate

Directions

Line a small shallow baking tray with baking paper.
Mark as complete

Place dates and peanuts into a food processor and process until smooth.
Mark as complete

Press mixture evenly into the lined baking tray, using a spatula or oiled hands.

Drizzle peanut butter on top and use the spatula to spread it evenly across the date mix.

Drizzle half the melted chocolate over the peanut butter and spread it all over until it is completely covered.

Place the baking tray in the freezer for 20-25 mins or until chocolate has set.

Remove from the freezer then flip the date bark over and cover the other side of the date mixture with a layer of melted chocolate. Spread out evenly and place back in the freezer for chocolate to set.

Once chocolate has set, cut into bites or use cookie cutters to cut out funny shapes.

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.
