Multiply the recipe to prep extras for the week.
8 slices wholemeal toast
1/3 cup tomato passata
2 tsp dried oregano
1 cup grated mozzarella
2 eggs
1/4 cup cauliflower puree
Pinch of sea salt and pepper
Extra virgin olive oil or unsalted butter, for frying

Directions

Cut the crusts off the bread.

Spread each slice with ½ tbsp of passata and sprinkle with oregano.

Add grated cheese and top with another piece of toast, pressing down with your hands to seal. Cut into two fingers.

Whisk together eggs and cauliflower puree in a bowl.

Carefully dip pizza fingers into the egg mix.

Heat a little oil or butter in a frying pan and add fingers. Cook from both sides for 2-3 mins.
