| 4 sheets of mountain bread | |
| ½ ripe avocado, peeled, seed removed and mashed | |
| 1 cup grated cheese | |
| 1 tomato, rinsed and thinly sliced | |
| ½ tbsp (10ml) extra virgin olive oil |
Directions

Place 2 wraps on top of each other on a clean work surface and spread evenly with approx. 2 tbsp of avocado.

Sprinkle with grated cheese and tomato slices.

Fold both ends in and roll into a log. Continue with the other wraps.

Brush wraps with olive oil and place into an air-fryer.

Air-fry for 5-7 mins on high.

Notes
STORING LEFTOVERS: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months.
Prep tips: Alternatively, place the wraps into a sandwich press and cook for 2-3 mins or until cheese starts to melt.
Allergies: For a dairy-free version: Leave out cheese and fill wrap with mashed chickpeas and grated veggies.
