Ingredients

Multiply the recipe to prep extras for the week.
3 fresh corns
Marinade
40ml extra virgin olive oil
2 tsp garlic powder
1 tsp mild paprika powder
Pinch of sea salt and pepper

Directions

Remove greens from the fresh corn.
Mark as complete

Fill a large pot with water and bring to the boil. Add corn and boil for approx. 5 mins. Run under cold water to cool.

Lay corn flat onto a cutting board and trim the ends. Stand corn upright and split lengthwise with a sharp knife. Cut halves into quarter lengths or smaller ribs as desired.

To make the marinade, add olive oil, paprika, garlic powder, salt and pepper to a small bowl and stir to combine.

Brush or rub ribs with the marinade and arrange in a single layer in the air-fryer basket. Air-fry at 200°C for 15-20 mins or until tender and crispy.

Mandy’s serving suggestion: Serve air-fryer corn ribs with aioli or dip of choice.
STORING LEFTOVERS: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months.
Prep tips: If you don’t own an air-fryer, simply preheat oven to 200°C and bake ribs for 20 mins or until golden brown.
Easy ingredient swaps: Swap paprika powder for spices of choice.
