Making chocolate truffles at home can be easy and delicious with just two ingredients. The key ingredients in these truffles are good quality chocolate and ricotta cheese. You can keep it simple or dip the truffle in melted chocolate for an extra rich chocolatey flavour. This recipe is also great for little ones as the ricotta cheese cuts the sugar in half and the added protein helps to balance out sugar levels. 125g ricotta cheese
1 cup melted 70% dark chocolate or chocolate of choice

Directions

Line a plate or tray with baking paper and set aside.

In a medium-sized bowl, combine ricotta cheese and melted chocolate.

Stir until smooth.

Shape teaspoon-sized eggs, using your hands or place in mini moulds. Place mixture into the fridge for 10 mins if it is too sticky to roll, and use coconut oil on your hands to prevent sticking.

Place in fridge for 5 mins (optional) to set.

Remove from fridge and dip truffles into melted dark chocolate and place on tray, and place in the fridge for 10 mins to set.

Notes

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 1 week or freeze for up to 6 months.
Allergies: For a dairy-free version: Swap ricotta with coconut cream.
Easy ingredient swaps: Swap dark chocolate for a good quality milk chocolate.
