Multiply the recipe to prep extras for the week.
12 Medjool dates (180g), pitted
½ cup (160g) peanut butter
1 cup (15g) brown rice puffs
3 brown rice cakes, broken apart
1 tbsp (10g) cacao powder
2 tbsp (40g) raw honey
Coating
100g dark chocolate

Directions

1.
Place all the ingredients, aside from the chocolate, into a high-speed food processor and process until well combined.
Mark as complete

Shape into a log, then cut into small log-size shapes. Place on a baking tray lined with baking paper. Place in the freezer for 2 hours.

Melt chocolate over a bowl of boiling water.

Dip each bite into the melted chocolate and sprinkle with an additional puffed grain of choice (optional). Place back onto the baking tray and freeze for 10 mins.

Notes

Serving and storing leftovers: Store in an airtight container in the fridge for up to 14 days or freeze for up to 6 months.
Allergies: For a nut-free version: Swap peanut butter for tahini or seed butter.
Easy ingredient swaps: Swap brown rice puffs for rice cakes ( place in processor and process until they break down and resemble puffs) Swap honey for maple syrup.
