That’s why I’ve created the ultimate school-friendly muesli bar. These homemade Choc Oat Muesli Bars are easy to make, budget-friendly, and your kids will love them. Plus, they’re nut-free, making them perfect for lunchboxes, and they’re fussy-eater-approved! Made with oats and naturally sweetened with honey, these bars provide long-lasting energy—without the sugar crashes you’d get from store-bought versions loaded with fast-release sugars and additives. Ingredients

Batch Cook
Multiply the recipe to prep extras for the week.
½ cup (100g) coconut oil, melted
½ cup (170g) raw honey
1 tsp (5ml) vanilla extract
2 cups (220g) oats
2 cups (30g) brown rice puffs
Topping:
½ cup (85g) dark choc chips

Directions

1.
Preheat the oven to 180°C and line an 8x8” baking dish with baking paper.
Mark as complete

Place all ingredients, aside from chocolate chips, into a high-speed food processor and pulse until combined.

Press the mixture into the baking dish, then sprinkle evenly with chocolate chips. Press the chocolate chips into the mixture using your hands.

Bake for 30 mins, remove from the oven and place on a rack to cool for 10-15 mins.

Cut into muesli bar pieces and serve.

Notes

Serving and storing leftovers: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months.
Prep Tips: Oil hands with additional coconut oil if the mixture is too sticky to work with.
Allergies: For a gluten-free version: Swap oats with gluten-free oats or quinoa flakes.
Easy ingredient swaps: Swap rice puffs for puffed grain of choice. Swap choc chips with dried fruit e.g. chopped apricots, dates, sultanas or apple rings.
