Light, crispy, and naturally sweetened with creamy cashew butter, date paste and a hint of vanilla, they’re made with simple, nourishing ingredients you can feel good about. Perfect sprinkled over yoghurt, added to porridge or enjoyed straight from the jar for a satisfying crunch, these homemade puffs are the kind of snack that disappears quickly in our house.

Ingredients

5 cups (100g) brown rice puffs or quinoa puffs
½ tsp ground cinnamon (optional)
¼ cup (70g) Date and cinnamon paste (or dates pureed)
2 tablespoons cashew butter
¼ cup (60mls) melted coconut oil
1-2 tsp pure vanilla extract or powder, to taste
¼ cup (60ml) coconut oil
pinch of sea salt (optional)

Directions

1.
Preheat oven to 150°C and line a baking tray with baking paper.

Place the puffs and cinnamon (if using) in a large bowl.

Add the date paste, cashew butter, oil and vanilla to a small saucepan over low heat. Stir until smooth and creamy, then remove from the heat and allow to cool slightly.

Pour the mixture over the puffs and stir until evenly coated.

Spread the coated puffs over the prepared tray and bake for 15–20 minutes, stirring halfway through.

Allow to cool completely on the tray. The puffs will crisp up as they cool.

Serve on their own, sprinkle over yoghurt or porridge, or use in any recipe that calls for rice puffs.

Notes

Make it...
Nut free: Swap the cashew butter for tahini or sunflower seed butter.
Budget-friendly: Use crushed seeds or nuts instead of puffed quinoa.
Family-friendly: If transitioning kids off ultra-processed cereals, add 2 tablespoons of pure maple syrup for extra sweetness.
Pantry-friendly: Swap the date paste for apricot, pear or apple purée.
LEFTOVERS: Store in an airtight container in a cool, dry spot in the pantry for up to two weeks.
