Ingredients

Multiply the recipe to prep extras for the week.
1 cup puffed quinoa
1/2 cup rolled oats
1/2 cup pumpkin seeds
1/2 cup shredded coconut
1 tsp ground cinnamon
Pinch of sea salt
1/2 cup dried apricots (sulphur-free)
1/4 cup Medjool dates, pitted
1/2 cup coconut oil, melted
1/4 cup maple syrup

High-speed food processor

Directions

Preheat oven to 160°C. Line a medium-sized rectangle baking tin with baking paper.

Place all dry ingredients into a high-speed food processor and process until smooth.

Add coconut oil and maple syrup and process until well combined.
Mark as complete

Press mixture into the baking tin and flatten with a spatula.

Place in oven and bake for approximately 30-35 mins or until it turns golden brown.

Allow to cool before slicing into child-appropriate fingers.

Notes

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 7 days or freeze for up to 4 months.
Prep tips: If mixture is too sticky, place it into the fridge for 20 mins before pressing into the baking tray.
Allergies: For a gluten-free version: Swap oats with quinoa flakes.
Easy ingredient swaps: Swap maple syrup for honey. Swap coconut oil for extra virgin olive oil or unsalted butter.
Additional boosters: Add 1 tbsp of chia seeds to the mixture before processing.
For fussy eaters: Make sure the mixture has a smooth consistency after processing. Drizzle muesli bars with dark chocolate.
