Ingredients

1 cup (110g) quick oats
3/4 cup (105g) wholemeal spelt flour
1 tsp (4g) baking powder
1 tsp (2g) ground cinnamon
1/3 cup (80ml) melted coconut oil
1/3 cup (80ml) maple syrup
1 egg
1 tsp (5ml) vanilla extract
1/2 cup (75g) grated carrot

High-speed food processor

Directions

Preheat oven to 180°C and line a baking tray with baking paper.

Place oats, flour, baking powder and cinnamon into a large bowl and stir until everything is well combined.

In another bowl, combine the rest of the ingredients.

Add wet ingredients to dry ingredients and stir to combine.

Pour the mixture into a medium-sized baking tin and flatten with a spatula.

Notes

STORING LEFTOVERS: Serve immediately, store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.
For a gluten-free version: Swap oats with quinoa flakes.
For an egg-free version: Swap egg for a store-bought egg replacer or use a flax egg (1 egg = 1 tbsp flaxseed meal + 3 tbsp water) or chia egg (1 egg = 1 tbsp chia seed meal + 3 tbsp water).
Easy ingredient swaps: Swap carrot for parsnip.
Additional boosters: Add 2 tbsp of chia seeds to the mixture.
Baby-friendly version: Leave out maple syrup and add ¼ cup of chopped dates or raisins.
For fussy eaters: Process the mixture in a food processor to give it a smooth texture.
