| 2 cups (220g) rolled oats | |
| ⅔ cup (100g) pumpkin seeds | |
| 1 tbsp (16g) chia seeds | |
| 1 tsp (2g) ground cinnamon | |
| Pinch sea salt | |
| 120g apple puree | |
| ¼ cup (25g) sultanas | |
| ¼ cup (60ml) coconut oil | |
| ¼ cup (60ml) raw honey |
Optional topping
| 50g melted sugar-free white or dark chocolate |
Directions
1.
Heat oven to 180°C and line a small baking dish with baking paper.

Place all ingredients into a high-speed food processor and pulse until well combined. Alternatively, combine all ingredients in a large bowl.

Press into prepared baking dish and bake for 25-30 mins.

Allow to cool completely before cutting into bars.

Drizzle with melted white or dark chocolate (optional). Allow to set in the fridge.

Notes
STORING LEFTOVERS: Serve immediately, store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.
Allergies: For a gluten-free version: Swap oats with quinoa flakes.
Easy ingredient swaps: Swap sultanas for dried fruit of choice.
Baby-friendly version: Leave out honey,. Process well for a smoother consistency. Serve mashed or in finger food-sized pieces.
For fussy eaters: Place oats and pumpkin seeds into a food processor and process into a fine meal.
